Mondongo’s opened in 1976 around a single idea: get families sitting around a bowl of mondongo, the tripe-and-chorizo soup that anchors Antioquian home cooking. The founding family brought the recipe from Bolívar, a village southwest of Medellín. The original outgrew its first home and moved to this larger site on Carrera 70 in Laureles; a second branch followed on Calle 10 in El Poblado in March 1995.
